Ingredients

1/2 medium onion, diced

1/2 bell pepper, diced

Veggie broth or water as needed

4-5 ounces sliced shiitake mushrooms

2-3 baby bok choy, chopped

1 teaspoon garlic powder

1 (12-ounce) container Just Egg brand egg substitute

Salt & pepper to taste

Method

  1. Heat a deep, large skillet over high heat and add the onions and peppers. Dry sauté for 2-3 minutes adding broth or water as necessary to avoid sticking. Add the mushrooms and sauté until they have released their liquid, and are slightly smaller, about 3-5 minutes. Add the bok choy and season with garlic powder, salt and pepper. Sauté until the greens are cooked. Shake the Just Egg and pour it into the skillet with the veggies. Lower the heat to medium and scramble until it reaches desired consistency, which will take longer than “regular” eggs, about 5-7 minutes.
