A smoothie is a great way to start the day, and it also is a filling and healthy snack or even dessert. I always experiment with different ingredients. This one is a winner!
 
1 cup unsweetened plant-based milk
1 cup water (more or less to create the consistency you like)
Small handful baby spinach
1/2” knob fresh ginger
1 frozen banana, peeled and cut into chunks
1 cup fresh (or canned in juice or frozen) pineapple
3-4 pods frozen ripe jackfruit (it’s orange, the color of mango)
2 tablespoons unsweetened shredded coconut
1/3 unsweetened plant-based yogurt (optional – I make my own and usually have some in the fridge, but it’s not worth buying just for this!)
Add all ingredients into a high speed blender in the order listed and blend until smooth and creamy.
